The Dining Galleries, our restaurant in Cornwall is a space where exceptional dining meets a curated world of art, a true ‘feast for the senses‘. Each meal unfolds against a backdrop of striking artwork, with pieces that speak to the natural beauty of Cornwall and influences from around the world. David Pascoe, one of Penventon’s original owners and a dedicated artist, was a large inspiration for this vision – where both culinary and visual artistry come together. Here, guests can savour memorable flavours while surrounded by hand-picked art, many from David’s own collection, creating an atmosphere that celebrates creativity, passion, and the finer details.
You can savour iconic dishes from around the world right here in Cornwall. Explore flavours from Andalusia with our heritage Gambas Pil Pil Prawns, journey to the streets of Venice with Mrs. P’s 60-year-old secret Tiramisu recipe, or even take a quick trip to the Cornish coast for our catch of the day. Our Authentic Gambas Pil Pil

Nestled amidst the picturesque Andalusian hills lies the heart of our culinary inspiration. For the Pascoe family, owners of Penventon, Andalusia holds a special place in their hearts. Their annual visit to this southern Spanish region became a cherished tradition, spanning generations.
Among the dishes and restaurants sampled during their visits, one reigned supreme – Gambas Pil Pil, sourced from none other than Las Canas, – known as ‘Eugenio’s’ by the Pascoe family – a local gem nestled in Andalusia’s hills. Aaron Pascoe, drawn by a shared passion for culinary craft, forged a friendship with Eugenio Jr., the heir to Eugenio’s culinary legacy.
One night, amidst laughter and clinking glasses, Aaron found himself behind the scenes, privy to the preparation of his favourite dish, Gambas Pil Pil. With meticulous care and notes, he absorbed every nuance. It was more than a recipe; it was a piece of cherished memory, and a slice of beloved Spain brought home.
Today, our menu proudly features this culinary treasure, unchanged to the passage of time. Yet, what sets it apart isn’t just its unparalleled flavour, but the veil of secrecy shrouding its recipe. Only two outside of Eugenio’s inner circle hold the key to its elusive spice blend – Paola (mother) and Aaron (son) Pascoe. Paola meticulously crafts the seasoning mix, ensuring each batch retains its authenticity, which is then given to the chefs to complete the dish, following the original technique.
Though many have endeavoured to replicate its magic, none have succeeded in capturing the exact recipe. Our Gambas Pil Pil remains a testament to tradition, a well-guarded secret passed down through generations of the Pascoe family.
