Every cocktail begins long before it reaches your table. Behind each glass is a process of creativity and collaboration – we wanted to give you a sneak peak into the journey of our seasonal cocktails, from the idea to the final pour.

With the arrival of our next seasonal menu, we gather as a team to reimagine what the next cocktail menu could become. As a cocktail bar in Cornwall, we will always embrace the chance to create something new for our guests to experience.

The Creative Process

We start by exploring flavour profiles that work well together. Citrus paired with florals, spice balanced with sweetness, or unexpected ingredients that spark curiosity (Chilli & Chocolate was surprisingly delicious).

Each cocktail is tested and refined. Ratios are adjusted and flavour profiles are balanced until everything comes together. Often one idea will spark another, and the process evolves naturally as we continue tasting and discussing.

It’s very much a team effort. Everyone brings their palate and creativity to the table, helping us narrow down all of the possibilities to the final selection that makes it onto the menu. This process is something we feel incredibly passionate about, and we hope that passion is reflected in every cocktail we serve, contributing to the ever-evolving scene of cocktails in Cornwall.

Why Our Menus Change with the Seasons

Just as our food menus evolve throughout the year, our cocktail menu changes to reflect the mood and flavours of the season.

In the summer months, cocktails tend to be fresh and vibrant. However as the seasons turn colder, we look towards the richer, more indulgent flavours. Our approach to seasonal cocktails allows us to explore this shift and create drinks that feel perfectly suited to each time of year.

For this season, we wanted to experiment with some flavours we haven’t yet tried, in order to create a collection of cocktails that embody the sweet essence of spring. Delicate notes of lychee and tart rhubarb are woven throughout the menu, bringing a balance that perfectly reflects the freshness of the season.

An Invitation from LWC

For this season’s menu development, we had the pleasure of collaborating with the wonderful team at LWC.

We were invited to use their space to develop and test our new cocktail ideas, an opportunity that allowed us to experiment with flavours, and refine our creations with access to their impressive selection of spirits and products, further shaping our approach to seasonal cocktails.

A special thank you goes to Robyn and the LWC team for their generosity and expertise throughout the day.

Hospitality thrives on relationships like this. Collaboration between businesses allows us to share knowledge, support one another, and ultimately create better experiences for our guests. It’s something we’re incredibly grateful to be part of.

After a day of experimentation and plenty of tasting, we’re delighted to introduce our new Spring cocktail menu. Each drink has been thoughtfully crafted to capture the freshness and energy of the season – bright flavours and a sense of lightness that feels perfectly suited to longer days and the first hints of sunshine. Spring Fever

Ingredients: Cointreau | St Germain | Framboise | Lemon Juice | Spumante

Rhubarb & Custard

Ingredients: Arber Rhubarb Gin | Advocaat | Vanilla Vodka | Cranberry Juice | Vanilla Syrup | Foamer | Double Cream

Cherry Bakewell

Ingredients: Old J Cherry Rum | Disaronno | Cranberry Juice | Almond Syrup | Strawberry Syrup
